Aeromonas spp. é considerado um patógeno oportunista e é frequentemente encontrado em amostras de fezes de pacientes com diarreia de origem alimentar (Vila et al., 2003). Este gênero é encontrado no solo, nas fezes humanas e animais e principalmente na água, que serve de veículo para a infecção direta do ser humano e também para a contaminação de produtos alimentares, dentre eles os de origem animal, que podem ser contaminados tanto na sua obtenção como no seu processamento industrial (Bizani; Brandelli, 2001Janda; Abbott, 2010).

As espécies de aeromonas são, em sua maioria, Gram negativas, anaeróbias facultativas e móveis devido a um único fagelo polar. Com exceção da Aeromonas salmonicida, considerada imóvel, produzem ácido ou ácido e gás a partir de carboidratos, reduzem nitratos a nitritos, são oxidase e catalase positivos e têm como temperatura ótima para multiplicação 22 – 28°C ou 35 – 37°C, dependendo da espécie (Carnahan; Joseph, 1991).

O gênero Aeromonas foi formalmente aceito pelo Manual Bergey de Bacteriologia na sua 7ª edição (Breed et al.,1957). Popoffi (1984), a partir de estudos de homologia de DNA, sugeriram três espécies, A. hydrophila, A. sobriaA. caviae, cada uma com sete a oito genomoespécies distintas. Posteriormente, Fanning et al. (1985) estenderam os grupos de hibridização para 14, identificando, dentro destes, 14 genomoespécies e 10 fenoespécies com quatro não nomeadas.

Atualmente, existem 31 espécies reconhecidas de AeromonasA. hydrophila (Stanier, 1943), A. salmonicida (Griffinet al., 1953), A. punctata (Breed et al., 1957), A. sobria (Popoffi; Véron, 1976), A. media (Allen et al., 1983), A. caviae(Schubert; Hegazi, 1988), A. veronii (Hickman-Brenner et al., 1988), Aeucrenophila (Schubert; Hegazi, 1988), A. schubertii(Hickman-Brenner et al., 1989), A. enteropelogenes (Schubert et al., 1990a), A. ichthiosmia(Schubert et al., 1990b), A. trota(Carnahan et al., 1991a), A. jandaei (Carnahan et al., 1991b), A. encheleia (Esteve et al., 1995), A. bestiarum (Ali et al., 1996), A. popoffii (Huys, 1997), A. culicicola (Pidiyar et al., 2002), A. simiae (Harf Monteil et al., 2004), A. molluscorum (Miñana-Galbis et al., 2004), A. bivalvium (Miñana-Galbis et al., 2007), A. aquariorum (Martínez-Murcia et al., 2008), A. tecta (Demarta et al., 2008), A. allosaccharophila (Martínez-Murcia et al., 1992), A. sharmana(Saha; Chakrabarti, 2006), A. diversa(Miñana-Galbis et al., 2010), A. fuvialis (Alperi et al., 2010), A. taiwanensis e A. sanarelli (Alperi et al., 2010), A. piscicola (Beaz-Hidalgo et al., 2010), A. rivuli (Figueras et al., 2011) e A. cavernicola (Martínez-Murcia et al., 2013) As espécies mais frequentemente associadas a infecções humanas são A. veronii, A. caviae e A. hydrophila(Figueras et al., 2000Figueras, 2005).

O primeiro estudo com base populacional visando à epidemiologia de infecções por Aeromonas foi realizado no estado da Califórnia, EUA, no ano de 1988. Nesta pesquisa foram relatados 280 casos durante o ano, dos quais 219 foram investigados. Aeromonas spp. foi isolada do trato gastrointestinal em 81% dos casos. Cinco pacientes morreram, pois estavam em condições médicas graves e imunocomprometidos (King et al., 1992).

Aeromonas é capaz de causar doenças em humanos, e a água e os alimentos têm papel importante na sua transmissão (Ottaviani et al., 2011). Sendo os alimentos de origem animal representantes importantes nesta epidemiologia, a apresentação de dados referente à presença deste gênero nesses produtos, sob forma de revisão, torna-se importante como forma de alerta e para contribuir na busca de reconhecimento do mesmo como patógeno em humanos.

A patogenicidade do gênero Aeromonas se deve a múltiplos fatores. A partir do desenvolvimento de técnicas moleculares, tem-se tornado mais comum investigar genes relacionados à expressão de certas características infecciosas do agente. Dentre os fatores que têm sido identificados através de genes expressos no seu material genético, podem ser citados: enterotoxina citotônica termolábil (alt), enterotoxina citotônica termoestável (ast), enterotoxina termolábil citotóxica (act), aerolisina (aera), fagelos A e B (fa), lipase (lip), elastase (ela), serina protease (ser), toxina Adp-ribosiltransferase (aexT) e DNases (exu) (Puthucheary et al., 2012). A presença de algum desses fatores vai determinar a evolução da infecção causada pela bactéria. Estudos mostram que a presença das enterotoxinas citotônicas termoestável e termolábil em isolados, ao mesmo tempo, tem representado casos de diarreia mais aquosa (Albert et al., 2000). A enterotoxina citotônica não causa degeneração das criptas e vilosidades do intestino delgado, enquanto a enterotoxina citotóxica resulta em grandes danos ao epitélio (Chopra; Houston, 1999).

O gênero Aeromonas apresenta sistemas de secreção que agem como facilitadores na translocação de proteínas. O sistema de secreção tipo II (T2SS), além desta função, secreta a enterotoxina citotóxica, capaz de causar hemólise, citotoxicidade e enterotoxicidade (Strozen et al., 2011). Já o sistema de secreção tipo III (T3SS) interfere em processos através da injeção de determinantes de virulência para o citosol de células do hospedeiro (Vilches et al., 2009), e também tem sido associado a um sistema chamado AexU, ligado à ADP ribosilação, inibindo a fagocitose e causando mortalidade em camundongos (Suarez et al., 2007Sierra et al., 2007). Foi identifcado ainda o sistema de secreção tipo VI (T6SS). A presença de dois efetores, a valina-glicina repetição G (VgrG), associada à actina-ADP, que induz a citotoxicidade das células (Suarez et al., 2010), e a proteína correguladora da hemolisina (Hcp), que induz a apoptose quando expressa em células HeLa (Suarez et al., 2008), tem sido associada a ele.

Aeromonas spp. são considerados eficientes formadores de biofilme no que diz respeito aos sistemas de distribuição de água ou locais de processamento de alimentos. Além disso, ficam aderidos com eficiência ao trato gastrointestinal (Scoaris et al., 2007). Isto se deve à presença de pili tipo I V, que promove a hiperpiliação e a autoagregação de células bacterianas (Béchet; Blondeau, 2003).

Fatores de codificação e genes regulamentares têm sido identificados em A. hydrophila, como a enolase (Sha et al., 2003), HlyA (hemolisina) (Erova et al., 2007), gidA (glucose – gene da inibição da divisão) (Sha et al., 2004), vacB (virulência associada à proteína B) (Erova et al., 2008), dam (DNA adenina metiltransferase) e tagA (ToxRregulated lipoprotein) (Pillai et al., 2006). Esta espécie possui uma série de genes de virulência, demonstrando ter o maior potencial de patogenicidade (Ottaviani et al., 2011).

O gênero Aeromonas demonstra alta resistência à ampicilina e, por isso, este antimicrobiano é utilizado nos meios de cultura seletivos para este micro-organismo (Ghenghesh et al., 2008). Scoaris et al. (2007) encontraram 100% de suscetibilidade para ciprofoxacina e 92% de resistência à ampicilina. Resultado semelhante foi encontrado por Vila et al. (2002), sendo que a suscetibilidade à ciprofoxacina e a resistência à ampicilina foram de 100% para cepas de A. caviae, A. veronii e A. hydrophila. Nos testes realizados por Bizani; Brandelli (2001), os 15 isolados estudados apresentaram resistência aos betalactâmicos, sozinho ou com outro antimicrobiano.

A água tem sido descrita como principal meio de disseminação de aeromonas, portanto, a infecção pode ser direta, através da sua ingestão contaminada, ou por meio do alimento que tenha sido submetido a algum processo em contato com esta.
